Cornfed Chicken Salad

If you love chicken salad like I love chicken salad, then this week’s featured recipe is for you!  Cornfed Chicken Salad is a delicious and easy recipe that your whole family will enjoy.  Use it in wraps or on your favorite sandwich bread for a quick and delicious option when the family’s busy schedule keeps you hopping!  The dressing is a unique combination that gives this salad just the right combination of sweet and tangy!  Try it out and be sure to drop me a line to let me know what you and your family think!  PS…Exiting things are happening here at Cornfed!!!….Next week we will have brand new look!  Stay tuned!!!!  Until then, have a great week!!! Cornfed Chicken Salad

This chicken salad is Amazing!

Ingredients

For salad:
4 c. chicken (cooked & chopped)
½ c. raisins
1 c. celery, diced
1 medium onion, diced
For dressing:
1 ½ c. mayonnaise
1 T. prepared mustard
1 T. lemon juice
½ c. sweet relish
¼ c. dill relish
1 T. horseradish sauce
1 T. strawberry jam
½ t. celery seeds
Pinch salt & pepper

Instructions

  1. In a large mixing bowl, combine chicken, raisins, celery and onion; set aside.
  2. In a small mixing bowl, whisk together the mayonnaise, mustard, lemon juice, sweet and dill relishes, horseradish sauce, strawberry jam, celery seeds, salt and pepper.
  3. Pour dressing over chicken mixture and fold to combine well.
  4. Chill before serving.

Fiesta Chicken

Hey everyone!  Hope your June is going well!  Fiesta Chicken, this week’s recipe, is a quick one to finish.  Make sure to plan ahead, though, because the chicken needs to marinate in the yummy sauce for 6-8 hours.  The variety of flavors and smokey spices in the marinade, combined with the tender leg quarter pieces, create this delicious and juicy chicken dish that you and your family are sure to enjoy!  Please feel free to drop me a line with your opinion after you’ve tried it!  I’d love to hear from YOU!  Have a great week!  Lisa

Fiesta Chicken

Ingredients

4 chicken leg quarters, separated
20 oz. can enchilada sauce
¼ t. cayenne pepper
½ t. chili powder
¼ t. ground cumin
¼ t. smoked paprika
½ t. granulated garlic
¼ t. chipotle seasoning
¼ t. black pepper, coarsely ground
15 oz. can fire roasted tomatoes, salsa style
3 T. canola oil

Instructions

  1. In a medium mixing bowl, combine the enchilada sauce, cayenne pepper, chili powder, ground cumin, smoked paprika, granulated garlic, chipotle seasoning and black pepper; set aside. Place separated leg quarters in a re-sealable bag or container with lid. Cover chicken pieces with marinade and place in the refrigerator to marinate for 6-8 hours.
  2. Heat oil in a hot skillet until oil sizzles. Reduce heat slightly and place chicken pieces into hot skillet. Sear one side of the chicken pieces and then the other (approx. 2-3 minutes on each side). Once both sides are seared, coat the top of each piece of chicken with the fire roasted tomatoes and place lid on skillet.
  3. Reduce heat to medium/low and simmer until meat thermometer reaches 165’F.
  4. Remove from heat and let rest 5 to 10 minutes before serving.

Notes

Plan ahead since chicken needs time to marinate.

Crispy Baked Parmesan Chicken

This week’s featured recipe is flavorful and juicy!  With a little bit of pre-planning (chicken has to marinate), Crispy Baked Parmesan Chicken is a yummy and fairly simple way to to serve your family a fresh, hot meal, right out of the oven.  The french fried onions in the coating give this recipe a little extra zing!  Paired with a family favorite veggie and a hot, baked potato or a delicious rice pilaf and you’re sure to have requests for seconds.   Have a great week!!!  Enjoy!!!  Lisa 

Crispy Baked Parmesan Chicken

Ingredients

6 Boneless, skinless chicken breasts
1 C. Lemon-lime soda
1 T. Garlic & herb seasoning
2 t. Garlic & rosemary seasoning
½ t. Black pepper
¼ t. salt
1 ½ C. cornflakes, crushed
¼ C. French fried onions, crushed
½ C. Parmesan cheese, grated
½ t. black pepper
½ t. salt
6 T. butter

Instructions

  1. In a seal-able container or plastic bag, combine lemon-lime soda, garlic & herb seasoning, garlic & rosemary seasoning, ½ t. black pepper and ¼ t. salt.
  2. Add chicken breasts to mixture and marinate for 4-6 hours.
  3. When ready to bake, preheat oven to 375’F. Grease 9”x13” pan and set aside.
  4. In a shallow container, combine cornflakes, French fried onions, Parmesan cheese, ½ t. black pepper and ½ t. salt.
  5. Remove chicken from marinade and coat entire breast in the cornflakes mixture, and place in prepared pan. Repeat until all chicken is coated and in the pan.
  6. Pour remaining cornflakes mixture evenly on top of chicken breasts and then pour a small amount of the marinade (approx. ½ cup) into the pan.
  7. Add one tablespoon of butter to the top of each chicken breast and bake for approximately 45 minutes or until juices run clear.

Notes

The chicken needs to marinate, so be sure to plan ahead.

Spicy Chicken Chili

Soups and stews are a great way to warm up on a cold winter day!  This week’s featured recipe is a delicious chicken chili with a spicy kick that’s sure to warm you up in a hurry!  I’m betting that, if your family likes spicy foods, like mine do, then you’ll be getting requests for seconds when you put this yummy Spicy Chicken Chili together!  And, putting this recipe together is fairly simple as well!  Hope you enjoy this delicious recipe as much as my family does!  Have a great week!  Lisa  

Spicy Chicken Chili

A delicious spicy chili with a little kick!

Ingredients

6 large chicken breasts (boneless, skinless)
1 large onion, diced
2 red bell peppers, diced
1 T. garlic, minced
2 t. cumin
½ t. black pepper
1 T. canola oil
3 T. butter
2 c. chicken stock
1 (4 oz. can) chopped green chilies
1 (8 oz. jar) jalapenos slices (pickled)
2 (16 oz. jars) salsa verde
3 (15 ½ oz. cans) navy or great northern beans
Shredded cheddar (optional)
Sour cream (optional)

Instructions

  1. In a large Dutch oven, add the canola oil and butter and melt over medium to high heat.
  2. Add the onion and bell peppers and sauté until onions are just starting to caramelize.
  3. Stir in the garlic, cumin and black pepper. Add the chicken breasts and cover with chicken stock. Bring to a boil and reduce heat to medium. Continue to cook until chicken is done.
  4. Remove chicken breasts and coarsely chop; then return to Dutch oven.
  5. Rinse and drain the beans. Add green chilies, jalapenos, salsa verde and beans to Dutch oven. Heat through and serve topped with shredded cheese and sour cream, if desired.

Spicy Chicken Chili

Chicken & Dumplings

Chicken & Dumplings

Delicious and soothing to the soul! This comfort food is outstanding!

Ingredients

For stock:
1 ½ lbs. split chicken breast (with skin & bones)
1 envelope onion soup mix
2 t. poultry seasoning
2 t. minced garlic
1 t. pepper
8 to 12 oz. egg noodles (optional)
4 to 6 quarts water
For Dumplings:
2½ c. flour
1 T. baking powder
1½ t. salt
3 T. dried, minced parsley flakes
6 T. shortening or butter
1½ c. milk or buttermilk

Instructions

  1. For stock:
  2. Place ingredients for stock in a Dutch oven, cover with water and bring to a boil.
  3. Reduce heat and simmer until chicken begins to fall off of the bone.
  4. Remove from heat and separate solid ingredients from stock through a colander.
  5. Return the stock to the Dutch oven.
  6. Let chicken cool enough to handle, then remove and discard skin and bones. Return chicken (bones removed) to stock and heat again to simmering.
  7. Add egg noodles at this point, if desired.
  8. Meanwhile, in a medium bowl, mix together dumplings.
  9. For dumplings
  10. Combine flour, baking powder, salt and parsley in a medium bowl and whisk together.
  11. Add shortening and cut in (with a pastry blender) until mixture resembles coarse meal.
  12. Add enough milk to make a sticky dough.
  13. Drop dough by the spoonful into the simmering broth.
  14. When all dough has been dropped into the broth, cover and continue to cook for approximately 15-20 minutes, until dumplings are cooked through.
