Zucchini Pizza Skillet

This week’s recipe, Zucchini Pizza Skillet, is so scrumptious and filling!  It’s a wonderful dish all on it’s own, or can be served over your favorite pasta! With lots of fresh veggies, including zucchini, mushrooms, onion and bell pepper combined with spaghetti sauce and yummy spices, it’s sure to be a family favorite!  It got rave reviews from my family, for sure!  Even the little ones that are just a smidge picky, gave this dish a two thumbs up!  This is definitely a repeat recipe!!!  Enjoy!!! Zucchini Pizza Skillet

Zucchini Pizza Skillet

Ingredients

2 lbs. ground beef
4 medium zucchini, quartered and sliced
1 medium onion, diced
1 large green bell pepper, diced
8 oz. cremini mushrooms, quartered
1 T. canola oil
2 T. butter
2 t steak seasoning
¼ t. garlic powder
¼ t onion powder
1 t. Italian seasoning
6 oz. can tomato paste
24 oz. can spaghetti sauce
16 oz. shredded mozzarella cheese
¼ c. parmesan cheese

Instructions

  1. In a medium skillet, brown ground beef, drain fat, and set aside.
  2. In a large skillet, heat the canola oil and melt the butter. Add the zucchini, onion, bell pepper and mushrooms. Sauté until zucchini and mushrooms become fork tender, and onion turns opaque. To this, add the steak seasoning, garlic powder, onion powder and Italian seasoning.
  3. Stir gently, then add the spaghetti sauce and tomato paste and combine well. Continue to stir over medium heat and fold in the browned ground beef.
  4. Top with mozzarella and Parmesan cheese and cover with lid to melt cheese.
  5. Remove from heat and allow to sit for approximately five minutes before serving.

Creamy Au Gratin Veggies

Hey everyone!  Creamy Au Gratin Veggies is this week’s yummy recipe! I know I’m getting it posted a little later than I’d planned, but I think you’ll agree that Creamy Au Gratin Veggies, is worth the wait!  I was trying to come up with a different way to fix veggies and thought about how my mom used to make Au gratin potatoes when I was growing up, which inspired me and lead to this creation!  Adding cream cheese to the roux, along with all the yummy spices, helps give this scrumptious side dish it’s creamy texture and deep flavor!  It’s been a hit here, for sure! Smoked Sausage and Cabbage

Smoked Sausage and Cabbage

Ingredients

​16 oz. pkg. smoked sausage, sliced 1/2 inch thick
1 medium head of cabbage, cored & thickly sliced
1 medium onion, diced
2 t. garlic, minced
1 c. chicken broth
2 T. olive oil
1 T. butter
Salt & pepper to taste

Instructions

  1. In a large skillet, or Dutch oven, heat the olive oil and melt butter over medium heat.
  2. Add onion and sauté until onion starts to turn opaque and caramelize.
  3. Then add the sliced cabbage, sliced sausage, minced garlic, chicken broth, salt and pepper and stir to combine, then cover to cook.
  4. Continue to cook, stirring occasionally, over medium heat until cabbage is tender and sausage is hot.
  5. Remove from heat and serve.
