Blue Cheese Garlic Potatoes

Blue Cheese Garlic Potatoes are a delicious and quick way to round out any meal!  The key to keeping time to a minimum?  Microwave the potatoes before you cut them into chunks!

If you’re like me, when it comes to deciding what to fix for dinner, most of the time it’s really not too difficult to come up with the main course.  However, some times, especially if I’m running short on time, picking a side dish can be a little more challenging.  Blue Cheese Garlic Potatoes is a recipe I created during one of those times.  It got good reviews from my personal food critic (the hubby).  And so, I wanted to share it with you all! 🙂

As I mentioned above, cooking the potatoes in the microwave cuts the cooking time for this delicious dish.  And since the potatoes are softened slightly, when added to the skillet, the buttery garlic flavor is absorbed well, too!

Simply rinse the potatoes under cool running water, place on a microwave safe plate and cook in the microwave.  (I cook mine for 5 minutes on one side, then flip the potatoes and cook another 5 minutes).

Remove potatoes from the microwave and allow to cool slightly.  When they are cool enough to handle, cut them in chunks, as shown above.

In a large skillet, melt the butter, then add the minced garlic and saute briefly.  Swirl the skillet to evenly distribute the garlic over the bottom surface.  Then add the potatoes to the skillet and top with salt and pepper.  Reduce the heat to medium and be sure to leave the lid off of the skillet while you’re frying the potatoes.  This will help get that yummy brown crust on the outside of Blue Cheese Garlic Potatoes.

Stir the potatoes to evenly coat with the butter and garlic.  Allow to brown and flip gently to evenly brown the potatoes.

When the potatoes are soft in the center and have a crispy brown crust, top with blue cheese crumbles, reduce heat to low and place the lid on the skillet.  Once the cheese crumbles begin to melt well, remove the lid and stir gently to coat the potatoes evenly.  Remove from the heat and sprinkle the parsley flakes over the top of the Blue Cheese Garlic Potatoes.  Serve immediately!  YUM! 🙂

5-6 medium red potatoes
3 T. butter
2 t. garlic, minced
1/3 c. Blue cheese crumbles
1 T. Dried parsley flakes
Salt & pepper to taste


  1. Wash and poke a few small holes in the skin of the potatoes. Cook in the microwave for 5 minutes. Flip potatoes and microwave for an additional five minutes. When done, remove potatoes from microwave and allow to sit for 3-5 minutes.
  2. When cool enough to handle, cut potatoes in large chunks; set aside.
  3. In a large skillet, melt butter and add minced garlic. Sauté briefly, then add the potatoes, covering the bottom of the skillet evenly.
  4. Add salt & pepper, reduce heat to medium and brown potatoes. Flip potatoes gently with a spatula or turner to prevent them from breaking down.
  5. Once potatoes are browned, top with blue cheese crumbles. Gently stir to coat potatoes, then remove skillet from heat, cover and allow cheese to melt. Sprinkle top of potatoes with parsley flakes. Serve immediately.
