Savory Hash Brown Potatoes

It’s hard to beat the smell of bacon frying in the kitchen.  But combine jalapenos, bell pepper, onion, garlic and potatoes crisping up in a little bacon grease and butter and OH BOY!!!  This week’s featured recipe is Savory Hash Brown Potatoes!  These delightful bites of yumminess can be enjoyed without anything added or topped with your choice of cheese, country sausage gravy, over easy eggs or whatever sounds good to you!  The recipe calls for grated potatoes, but prepackaged hash browns will certainly work if you’re running short on time.  Hope you try them soon!  I’d love to have your feedback, so feel free to share your opinoin of this week’s recipe!   Hope ya’ll have a great week!  Lisa

Savory Hash Brown Potatoes

Breakfast, lunch or dinner, these hash browns are delicious!

Ingredients

2 lbs. Potatoes, shredded, rinsed & drained
1 medium onion, diced
1 small yellow bell pepper, diced
1 medium jalapeño, seeds removed, diced
2 T. bacon grease
2 T. butter
1 t. garlic, minced
1 t. steak seasoning
½ t. season salt
½ t. black pepper

Instructions

  1. In a large skillet, over medium heat, melt bacon grease and butter until sizzling.
  2. Add the onion, bell and jalapeño pepper and sauté until onion is translucent. Add minced garlic to pan and then add the shredded potatoes evenly over the onion and peppers.
  3. Top with steak seasoning, season salt and pepper. Flip potatoes when they are crisp and brown. Continue to cook to desired crispiness.

Cinnamon Buttermilk Biscuits

A cool spring morning with fresh-from-the-oven Cinnamon Buttermilk Biscuits with simple powdered sugar icing drizzled over the tops….What could be more enticing?  This week’s featured recipe is not only yummy but simple to put together!  For a little variation, add raisins or pecans or both to this almost dessert recipe!  But Cinnamon Buttermilk Biscuits are so yummy that you don’t need to!  I love to make these biscuits and sometimes double the batch to have extra (maybe…lol) to put a few in the freezer for later.  When I do this, I freeze them in individual bags so that they’re quick to grab on the way out the door!  Give em a try & please give me your feedback!  I’d love to hear from you!  Have a great week!  Lisa

Cinnamon Buttermilk Biscuits

Ingredients

2 ½ c. all-purpose flour
1 T. plus 1 t. baking powder
½ t. baking soda
1 T. cinnamon
2 T. sugar
¾ t. salt
3 T. butter
3 T. shortening
1 ¼ c. buttermilk

Instructions

  1. Preheat oven to 450'F and grease a large baking sheet.
  2. In a large bowl, add flour, baking powder, baking soda, cinnamon, sugar and salt. Gently whisk dry ingredients together.
  3. Using a pastry blender, cut butter and shortening into dry ingredients until mixture appears lumpy and course.
  4. Add buttermilk and mix until dry ingredients are just moistened.
  5. Turn dough onto a floured surface and knead 4-6 times. Pat or roll dough to ¾” thick. Cut with biscuit cutter and place on greased baking sheet.
  6. Place in oven and bake for 12-15 minutes or until biscuit tops are golden brown.
  7. Remove from oven and top with simple powdered sugar frosting.
  8. Makes approximately 8-2” biscuits.
  9. For simple powdered sugar frosting:
  10. Whisk 1 Tablespoon milk or cream with 2 to 3 cups of powdered sugar, depending on desired thickness. Drizzle over tops of warm biscuits. Enjoy!

Fluffy Buttermilk Pancakes

Hey everyone and welcome to December!  This week’s featured recipe is Fluffy Buttermilk Pancakes!  These pancakes can be put together in a snap and are absolutely AMAZING!  The light, fluffy texture of these pancakes go great with breakfast sausage, ham, bacon, or fresh fruit and are DEEEEELicious!!!  These pancakes are a great way to feed a group of hungry folks in a hurry and the recipe is easy to double or even triple!   Hope you enjoy these yummy pancakes as much as my family and I do! Fluffy Buttermilk Pancakes

Ingredients

​2 C. Flour
2 T. Sugar
2 t. Baking Powder
1 t. Baking Soda
1 t. Salt
4 T. Butter
2 Large Eggs
½ t. vanilla
2 C. Buttermilk
Oil

Instructions

  1. Combine flour, sugar, baking soda, baking powder and salt in small bowl, set aside.
  2. In another bowl, beat eggs with mixer until frothy.
  3. Melt butter, and then stir butter, buttermilk and vanilla into egg mixture.
  4. Add flour mixture gradually to egg mixture and beat on low speed of a mixer until just combined. Heat oil on a griddle and add batter to hot grill using a ladle or small measuring cup.
  5. Turn pancakes when bubbles begin to appear on the surface.
  6. Allow to brown and remove from griddle.
