Creamy Au Gratin Veggies

Hey everyone!  Creamy Au Gratin Veggies is this week’s yummy recipe! I know I’m getting it posted a little later than I’d planned, but I think you’ll agree that Creamy Au Gratin Veggies, is worth the wait!  I was trying to come up with a different way to fix veggies and thought about how my mom used to make Au gratin potatoes when I was growing up, which inspired me and lead to this creation!  Adding cream cheese to the roux, along with all the yummy spices, helps give this scrumptious side dish it’s creamy texture and deep flavor!  It’s been a hit here, for sure! Tasty Tot Casserole

Tasty Tot Casserole

Ingredients

​2 lbs. ground beef
1 medium onion, diced
1 tsp. garlic, minced
2 – 15 oz. cans French-style green beans, drained
2 – 10 oz. cans cream of mushroom soup
½ tsp. garlic powder
½ tsp. black pepper
2 lb. bag frozen tots
16 oz. cheddar cheese, shredded

Instructions

  1. Preheat oven to 400’F.
  2. In a large Dutch oven, brown ground beef and onion.
  3. Drain fat and add meat mixture back to Dutch oven.
  4. Add minced garlic, green beans, cream of mushroom soup, garlic powder, pepper and half of the cheddar cheese.
  5. Mix together until just combined.
  6. Pour mixture in a greased, 9 x 13 inch pan and spread evenly. Add tots, in rows, to the top of the meat mixture. Cover with remaining cheese and bake for 45 minutes or until cheese is bubbly and golden brown.

Cheesy Spinach Bake

Cheesy Spinach Bake

Ingredients

2 ½ lbs. frozen, chopped spinach
2 – (8 oz. pkgs.) cream cheese, softened
2 – (10.5 oz. cans) cream of chicken soup
1 medium onion, diced
2 t. garlic, minced
8 oz. pkg. mozzarella or cheddar cheese, shredded
6 oz. pkg. French fried onions
½ c. crushed plain corn flakes

Instructions

  1. Preheat oven to 350’F. Coat a 9”x13” baking pan with butter and set aside.
  2. In a large mixing bowl, beat the cream cheese until smooth.
  3. Add the soup and continue to beat with mixer until well blended.
  4. Stir in the diced onion, minced garlic and half of the mozzarella cheese and half of the French fried onions.
  5. Add the spinach and stir well to coat.
  6. Add mixture to baking pan, spreading mixture to edges of pan. Top with remaining French fried onions, mozzarella cheese and crushed cornflakes, spreading evenly.
  7. Bake for approximately 45 minutes or until center of casserole reaches 165’F.

Easy Reubin Casserole

Easy Reubin Casserole

Ingredients

​8 slices rye bread
2-14.5 oz. cans Sauerkraut, drained
1 medium onion, diced
1-16 oz. bottle Thousand Island dressing
1 ½ lbs. corned beef, chopped
16 oz. Swiss cheese, shredded
4 Tbsp. butter

Instructions

  1. Preheat oven to 350’F. Grease a 9 x 13 baking pan and set aside.
  2. On a griddle, melt the butter and toast the rye bread, making sure both sides are lightly toasted. Once cool enough to handle, cut the bread in small squares. Add half the bread to the greased baking pan.
  3. In a bowl, combine Sauerkraut and onion, then add this mixture to the pan.
  4. Pour half the bottle of Thousand Island dressing evenly over Sauerkraut mixture.
  5. Add half of the Swiss cheese over the top of the dressing layer and top with the chopped corn beef.
  6. Add the remaining dressing to the corned beef layer, and top with remaining bread.
  7. Bake casserole for 40 minutes or until heated through.
  8. Remove from oven and add remaining Swiss cheese and return to oven until cheese is melted and bubbly.
