It sure looks like summer is upon on us! Beautiful, blue skies and sunshine helps make perfect days for baseball, softball, t-ball and other summer sports! That brings us to this week’s featured recipe! Brats N Fixins is so quick and easy, I’m betting that it just may be a frequent ‘go-to’ recipe when you’re running tight on time and need that meal ready in a hurry! And how can you go wrong with brats? Especially when they take 20 to 25 minutes from start to finish (when using fresh or thawed brats). Give em a try! They’re delicious AND quick! Have a great week! - In a large skillet, over medium heat, melt butter with canola oil.
- Add onions to skillet and saute until just beginning to turn opaque.
- Add bratwurst and brown on all sides. Add garlic to skillet and top brats evenly with sour kraut and then the fire roasted tomatoes.
- Cover and reduce heat to low.
- Continue to cook on low until bratwursts are done and sour kraut and tomatoes are bubbling. Serve immediately.

- In a large skillet, or Dutch oven, heat the olive oil and melt butter over medium heat.
- Add onion and sauté until onion starts to turn opaque and caramelize.
- Then add the sliced cabbage, sliced sausage, minced garlic, chicken broth, salt and pepper and stir to combine, then cover to cook.
- Continue to cook, stirring occasionally, over medium heat until cabbage is tender and sausage is hot.
- Remove from heat and serve.

Cheesy shell pasta with sausage!

- Cook pasta according to package directions.
- Meanwhile, slice smoked sausage into one inch sections and heat through in a large skillet or Dutch oven.
- Drain pasta and add to skillet with smoked sausage.
- Stir in butter, milk and cubed cheese.
- Continue to stir until butter and cheese are melted.
- Serve immediately.
Notes
You could add a can of veggies to this recipe and create a whole meal in one!
Sausage Zucchini Bake
Hey everyone! Looks like back to school time is upon us once again, and if you’re like me, I’m trying to use up the last of the garden fresh zucchini that we harvested. It’s such a versatile vegetable and I love to use it in many different recipes. The one I’m sharing with you this week is really quite tasty and makes for an easy one dish meal! That makes serving it easy and clean up a snap! Pairing zucchini with herbs, onion, garlic, bell pepper and sausage creates a wonderful flavor and is sure to not only help you put those zucchini to good use, but will have your family asking for seconds! A delicious way to use the ever versatile Zucchini!

- In a greased, 9”x 13” pan, press crescent rolls in the bottom and up the sides. Set aside. In a large skillet, melt butter and add zucchini, onion, mushrooms, bell pepper, salt, basil and oregano. Cook over medium heat until tender. Drain liquid from vegetables and set aside. In another skillet, brown sausage, drain fat and add to the vegetables. In a large bowl, combine garlic, Parmesan cheese, eggs and one package of the mozzarella cheese. Pour this mixture over vegetables and sausage. Top with remaining package of cheese and cook at 375’ for 40-45 minutes or until center reaches 165’F.
