Tangy Summer Pasta Salad

Salads, to me, mean the season is just right for summer barbecues and gatherings with family and friends.  I know I’ve shared a few salad recipes recently, but I think that may be because I’m so looking forward to this coming season!  This week’s featured recipe is another yummy, quick and easy pasta salad!  Tangy Summer Pasta Salad is so simple, yet so delicious, that it certainly didn’t last long at this house!  The combination of tri-colored pasta, delicious sun dried tomatoes, and other yummy veggies is a delight to the taste buds, for sure!  And isn’t everything better with the savory, scrumptious flavor of BACON?  Until next time, have a great week!  Lisa

Tangy Summer Pasta Salad

A bright & fresh summer salad!

Ingredients

12 oz. pkg. tri-colored penne pasta
8.5 oz. jar sun dried tomatoes in oil, drained
15 oz. can medium black olives, drained and halved
8 oz. jar peppercinis, chopped
8 oz. bacon, cooked and crumbled
6 oz. cherry tomatoes, halved
1 small onion, diced
¼ c. balsamic vinegar
2 T. canola oil
1 T. garlic, minced
1/3 c parmesan cheese, grated

Instructions

  1. Cook pasta according to package directions, drain, then cover with cold water to stop the cooking process. Drain again and place in a medium mixing bowl.
  2. Add the sun dried tomatoes, black olives, peppercinis, onion and bacon to pasta, and stir gently to combine; set aside.
  3. In a small mixing bowl, combine the balsamic vinegar, canola oil and garlic.
  4. Pour vinegar mixture over pasta mixture and stir to coat.
  5. Add Parmesan cheese and fold to blend.
  6. Chill before serving and garnish with additional bacon and Parmesan cheese, if desired.

Grandma Donna’s Mac N Tuna Salad

Spring appears to finally be here at last!  This week has been the sunniest one so far at our house!  I’m so happy to see the new buds on the trees!  The warmer weather has put me in the mood for fresh and cool salads.  One of my family’s favorites is this week’s featured recipe.  Grandma Donna’s Mac N Tuna Salad is a must-have staple around our place, especially during the spring and summer seasons!  The creamy texture of this salad, combined with the crunch of celery & onion, and the rich flavor of tuna, is a delicious and refreshing salad at the dinner table or any carry-in gathering!  Quick and easy to put together, this salad recipe is sure to have your family asking for more!  Have a great week!  Lisa

Grandma Donna’s Mac N Tuna Salad

Ingredients

16 oz. elbow macaroni pasta
15 oz. can sweet peas, drained
1 small onion, finely diced
1 ½ c. celery, thickly sliced
6 oz. can tuna in water, un-drained
¼ c. sweet pickle relish
¼ t. granulated garlic
¼ t. celery seeds
2-2 ½ c. mayonnaise
Parsley flakes (optional)

Instructions

  1. Cook macaroni according to package directions then drain and rinse with cold water.
  2. In a large mixing bowl, add drained and cooled pasta, onion, celery, tuna and sweet relish.
  3. Stir gently to combine, and then add the mayonnaise, granulated garlic and celery seeds.
  4. Stir gently again to combine, and then fold in the sweet peas.
  5. Cover and refrigerate for a few hours prior to serving to allow flavors to blend.
  6. Garnish with parsley flakes, if desired

Zippy Italian Pasta Salad

This salad is a cool and delicious choice for those pot luck dinner and carry in lunches.  Full of fresh veggies, colorful rotini pasta and flavored with Italian dressing, it’s so simple and fresh, you’ll be getting requests for seconds and the recipe!  Enjoy!!

Zippy Italian Pasta Salad

Yields 12-16

Ingredients

1 – 16 oz. pkg. garden spiral pasta
1 – 16 oz. bottle Italian Dressing
1 – 4 oz. fresh mushrooms, washed and sliced
1 – 6 oz. pkg. cherry tomatoes, quartered
2 – medium bell peppers, diced
1 – medium red onion, diced
1 – 8 oz. jar sliced peppercinis
1/8 c sugar
2 tsp Italian Seasoning
1 tsp garlic powder

Instructions

  1. Cook pasta according to package directions. Drain and cool slightly. In a large bowl, add Italian dressing, Italian seasoning and garlic powder to pasta and combine gently. To the pasta mixture, add mushrooms, tomatoes, bell peppers, onion, peppercinis and about a quarter of the peppercinis juice and gently fold together. Chill three to four hours or overnight and stir before serving.
