Crispy Baked Parmesan Chicken

This week’s featured recipe is flavorful and juicy!  With a little bit of pre-planning (chicken has to marinate), Crispy Baked Parmesan Chicken is a yummy and fairly simple way to to serve your family a fresh, hot meal, right out of the oven.  The french fried onions in the coating give this recipe a little extra zing!  Paired with a family favorite veggie and a hot, baked potato or a delicious rice pilaf and you’re sure to have requests for seconds.   Have a great week!!!  Enjoy!!!  Lisa

Crispy Baked Parmesan Chicken

Ingredients

6 Boneless, skinless chicken breasts
1 C. Lemon-lime soda
1 T. Garlic & herb seasoning
2 t. Garlic & rosemary seasoning
½ t. Black pepper
¼ t. salt
1 ½ C. cornflakes, crushed
¼ C. French fried onions, crushed
½ C. Parmesan cheese, grated
½ t. black pepper
½ t. salt
6 T. butter

Instructions

  1. In a seal-able container or plastic bag, combine lemon-lime soda, garlic & herb seasoning, garlic & rosemary seasoning, ½ t. black pepper and ¼ t. salt.
  2. Add chicken breasts to mixture and marinate for 4-6 hours.
  3. When ready to bake, preheat oven to 375’F. Grease 9”x13” pan and set aside.
  4. In a shallow container, combine cornflakes, French fried onions, Parmesan cheese, ½ t. black pepper and ½ t. salt.
  5. Remove chicken from marinade and coat entire breast in the cornflakes mixture, and place in prepared pan. Repeat until all chicken is coated and in the pan.
  6. Pour remaining cornflakes mixture evenly on top of chicken breasts and then pour a small amount of the marinade (approx. ½ cup) into the pan.
  7. Add one tablespoon of butter to the top of each chicken breast and bake for approximately 45 minutes or until juices run clear.

Notes

The chicken needs to marinate, so be sure to plan ahead.

Delicious, tender, juicy!  These pork chops are out of this world and bursting with flavor.  Plan ahead to marinate them and then grill them to perfection.  You just can’t beat these yummy chops!

Marinated Pork Chops (Tenderloins)

Ingredients

4 6-8 oz pork tenderloins
1 12 oz can carbonated beverage
1 8 oz bottle zesty Italian dressing
1 tsp minced garlic
1 tbsp teriyaki sauce

Instructions

  1. Combine carbonated beverage, Italian dressing, garlic and teriyaki sauce to create marinade. Place tenderloins in plastic freezer bag or covered container. Add marinade to tenderloins and coat well. Place in refrigerator for 4-8 hours. When ready to cook, lightly grease griddle and add tenderloins to hot griddle. Sear both side and cook just until juices run clear (approximately 2-3 minutes on each side). Remove from heat and serve.

Bacon Topped Grilled Chicken Breast

This grilled chicken breast is out of this world delicious!  Juicy, flavorful and really not a whole lot of extra effort!   Who can go wrong when you’re talking about BACON, anyway?  Oh, and by the way, have I mentioned before that I love chicken?  I’m sure this won’t be the last time you see that statement either!  Fried chicken, baked chicken, chicken salad, chicken livers, chicken & dumplings,….. YUMMMO!!! 🙂

Bacon Topped Grilled Chicken Breast

Ingredients

4- 6 oz. chicken breasts
8 oz. bottle Italian dressing or marinade
3 cloves garlic, minced
2 tsp. sugar
8 strips bacon, cooked
8 oz. shredded cheddar cheese

Instructions

  1. **In a seal-able plastic bag, combine Italian dressing, garlic and sugar. Add chicken breasts to marinade and place in refrigerator for 6-8 hours.**
  2. Fry bacon strips and set aside to drain. Grill chicken breasts and place in skillet. Place two strips of bacon on each chicken breast, and then cover with shredded cheese. Place lid on skillet and cook over low heat until cheese is melted.
