Cheesy Spinach Bake

Cheesy Spinach Bake

Ingredients

2 ½ lbs. frozen, chopped spinach
2 – (8 oz. pkgs.) cream cheese, softened
2 – (10.5 oz. cans) cream of chicken soup
1 medium onion, diced
2 t. garlic, minced
8 oz. pkg. mozzarella or cheddar cheese, shredded
6 oz. pkg. French fried onions
½ c. crushed plain corn flakes

Instructions

  1. Preheat oven to 350’F. Coat a 9”x13” baking pan with butter and set aside.
  2. In a large mixing bowl, beat the cream cheese until smooth.
  3. Add the soup and continue to beat with mixer until well blended.
  4. Stir in the diced onion, minced garlic and half of the mozzarella cheese and half of the French fried onions.
  5. Add the spinach and stir well to coat.
  6. Add mixture to baking pan, spreading mixture to edges of pan. Top with remaining French fried onions, mozzarella cheese and crushed cornflakes, spreading evenly.
  7. Bake for approximately 45 minutes or until center of casserole reaches 165’F.
