Classic Egg Salad is a quick, delicious and simple solution when you’re running short on time and your family is hungry! My family loves eggs! Over easy, scrambled, fried, boiled, you name it, they love them! This Classic Egg Salad recipe is so quick and simple to put together! I felt it was a must that I shared it as another meal in short order!
When it comes to boiling eggs, I know there are a lot of different methods out there. The following is one that works really well for me. First, I add eggs to cold water in a sauce pan and add a shake or two of salt. Next, I bring the contents of the sauce pan to a boil. Once the contents start to boil, I cover the sauce pan, set a timer for ten minutes and remove from the heat. After the ten minutes have passed, I dump the hot water from the sauce pan and add cold water. After about five minutes or so, the eggs can be peeled. The great thing about this method is that I usually don’t have too many issues removing the shells!
So on to this yummy, quick and easy Classic Egg Salad recipe!
After boiling and peeling the eggs, chop them up in small pieces. I accomplish this task using a pastry blender! I find that it gives me the results I want much quicker than any other method I’ve tried!
Once the eggs are chopped up, add the mayonnaise, sour cream, prepared mustard and stir to combine. There’s not a lot of mustard in this recipe, but just enough to give the Classic Egg Salad a little tang.
Next, it’s time to add the sweet relish! Again, stir to combine, then add the powdered sugar for a little extra sweetness. Delish!!! 🙂

- In a medium mixing bowl, chop eggs until fine. Add sour cream, mayonnaise and mustard; stir to combine. Once mixture is creamy, add relish and confectioner’s sugar. Stir well to combine and serve.
