Cornfed Turkey Potpie Casserole

Cornfed Turkey Potpie Casserole is a great way to use up that leftover turkey from Thanksgiving!  And if you’d prefer to save it for later, this casserole recipe freezes well, too!  Just mix it together.  Add it to an oven & freezer safe container and store it in your freezer!  You’ve got dinner already in the works for later!  When you’re ready to use it, simply pull it from the freezer, place it in the oven and reheat to 165’F.  Add the biscuits and bake for an additional 12-15 minutes and viola!  Hot and delicious Cornfed Turkey Potpie Casserole is ready to serve to your hungry family!

Simple, easy and delicious!  I love using leftover turkey this way!  It’s a filling, comforting and tasty way to use up those delicious leftovers!

Cornfed Turkey Potpie Casserole

A delicious way to use leftover turkey!

Ingredients

1 lb. cooked turkey, chopped small
16 oz. bag frozen mixed vegetables
10.5 oz. can cream of chicken soup
½ c. chicken broth
1 small onion, diced
½ t. garlic, minced
Cornfed Creation’s Buttermilk Biscuits OR 2-7.5 oz. cans buttermilk biscuits
Salt & pepper to taste

Instructions

  1. Preheat oven to 350’F.
  2. Grease a 9”x9” baking dish and set aside.
  3. In a large mixing bowl, whisk together the cream of chicken soup and chicken broth.
  4. Stir in the onion, garlic, turkey and mixed vegetables.
  5. Pour into prepared pan and bake for 40-45 minutes.
  6. Remove from oven and place biscuits, sides touching, on top of the turkey casserole.
  7. Return to oven and bake for an additional 12-15 minutes, or until biscuits are golden brown and center of casserole reaches 165’F.
