This country hash is an absolutely wonderful way to use any leftover beef or even pork roast.  My husband has always loved corned beef hash (from a can) and I have made it for him often.  When I created this particular recipe, he was very complimentary and told me he loved it!  I hope you love it as much as we do!  Enjoy

Country Hash

Ingredients

For Slow Cooker Beef Roast
4-5 lb. beef roast
2 c. cola
2 T. garlic, minced
1 T. season salt or steak seasoning
1 medium onion, coarsely diced
1 (15 oz.) can fire roasted tomatoes (salsa style)
For Country Hash
2 c. Slow Cooker Beef Roast (see below for recipe)or other cooked roast, cut in chunks
4 c. cubed russet potatoes
1 large onion, diced
1 T. garlic, minced
¼ c. butter
2 t. season salt or steak seasoning
1 t. Slow black pepper

Instructions

  1. For Slow Cooker Beef Roast
  2. Place roast in a slow cooker.
  3. Pour cola over the top of the roast, then evenly spread the garlic over the top of the roast.
  4. Add the season salt or steak seasoning and onion and pour tomatoes over the top of the roast. Cover and cook on low for 6-8 hours.
  5. Roast should be fall apart tender when finished.
  6. For Country Hash
  7. In a large skillet, melt butter until it sizzles.
  8. Add onion and garlic to skillet first and stir briefly. Then add the potatoes, season salt or steak seasoning and black pepper.
  9. Stir well to coat potatoes with butter and seasonings.
  10. Cover and cook over medium heat until potatoes are almost tender, stirring occasionally.
  11. Add chunks of beef roast and stir briefly to combine.
  12. Cover and continue to cook until potatoes are tender and beef is hot.
  13. Serve immediately.
