Creamy Ranch Cucumber Tomato Salad is a delightfully fresh and simple veggie salad. It’s getting ever closer to the summer season when garden veggies are plentiful! This is a wonderful way to use those fresh garden veggies in a way that’s sure to disappear quickly from your table!
Although I’ve never been a huge fan of the summer heat, I have always loved fresh veggies from the garden. As a kid growing up in the Midwest, my mom planted and tended a garden every year. It was one of her favorite hobbies and she loved to spend time taking care of it and harvesting the delicious bounty that it produced. Green beans, peas, corn, bell peppers, zucchini, onions, cucumbers and tomatoes were usually always in attendance in her garden! Creamy Ranch Cucumber Tomato Salad would have definitely made it to Mom’s recipe collection!
Combining fresh cucumbers, tomatoes and onion together with a creamy ranch and garlic dressing results in an amazingly delicious salad! And it’s quick and simple to prepare, too!
Let’s put this yummy salad together, shall we?
After washing the cucumbers and tomatoes, peel the cucumbers, then slice them and the tomatoes as shown below…
I like to leave a few strips of the green cucumber skin to add more color variation to Creamy Ranch Cucumber Tomato Salad. I think the slices of cucumber, shown below, are really pretty.
Slice the tomatoes vertically, as shown below…
Then roughly chop the sweet onion. (I like to slice the onion first, then give it a rough chop…)
Place the cucumbers, tomatoes and onion in a large mixing bowl and set aside.
Then mix the dressing together and pour over the veggies.
The combination of mayonnaise, sour cream, buttermilk, ranch dressing mix and other spices gives Creamy Ranch Cucumber Tomato Salad an amazing flavor! Be sure to fold the dressing into the veggies until all are well coated. Then cover and place in the refrigerator to chill for at least an hour before serving! Then enjoy!!! Can you say ‘Summer in a bowl!’? Yummo!!!
