Creamy Seafood & Broccoli Alfredo!!! Yummmo!!! You know, it’s been quite awhile since my husband and I have had children at home. Having to worry about what I was going to feed the family when I got home from work was one of the many things that influenced me and lead me to where I am today. When the kids were little, I’d review the weekly sales ads and then come up with a menu for the week that was based on items I already had on hand and those items on sale that week. This would help me determine the weekly grocery list too and the weekly menu would be posted for everyone to see.
Since it’s that time of year again, and kiddos across the nation are back to school and hard at work learning and growing, I wanted to share that little bit of time saving advise that helped me so much!

This week’s recipe, Creamy Seafood & Broccoli Alfredo, is so creamy and yummy! And so, if you have ever been intimidated by the thought of cooking a delicious dish with Alfredo in it’s name, this is the recipe that will chase those doubts away for good! Easy, quick, creamy, delicious!
In order to begin creating this yummy deliciousness, caramelize the diced onion in butter! Because….isn’t everything better when you use butter?
Then add the minced garlic and melt the remaining butter and the cream cheese over medium heat….
Make sure you stir/whisk constantly to combine well and in order to prevent sticking. Then add the Parmesan cheese and milk….mmmmmmhmmm!!!! PS….for a creamier, richer sauce, you can substitute half & half for the milk.
And make sure your shrimp is fully cooked, de-veined with tails removed. To chop the imitation crab meat, I use a pastry blender instead of a food processor! It’s easy and keeps the great texture of the crab meat!
And then fold in the shrimp and crab meat so that all that yummy seafood is coated with the deliciousness of the creamy Alfredo sauce!
Cook the pasta and broccoli (see recipe), then drain…..
After adding together, stir pasta and broccoli mixture with creamy seafood Alfredo mixture and ENJOY!!!!! I topped this serving with more Parmesan cheese and a little bit of parsley! SOOOOO YUMMMY!!!!

- In a large Dutch oven or stock pot, bring water, 1 t. vegetable oil and ¼ t. salt to a rolling boil. Add pasta, stirring occasionally, and allow to cook for 10 minutes.
- Continue to stir and add the frozen broccoli to the boiling pasta. Continue to cook for 3-5 minutes or until pasta and broccoli are tender. Drain pasta and broccoli, then return to the Dutch oven to keep warm; set aside.
- In a large skillet, melt 2 tablespoons of the butter and when melted, add the onion and sauté until tender and just starting to caramelize.
- Reduce heat to medium and stir in the garlic and add the cream cheese and remaining butter. Using a whisk, stir constantly while the butter and cream cheese melt; then add approximately 1 cup of the milk. Whisk and cook until mixture is combined well and begins to thicken. Continue to whisk and add additional 1 cup of milk and approximately half of the Parmesan cheese. Continue to cook until mixture begins to thicken, and then add remaining Parmesan cheese. Continue to whisk to incorporate cheese. If mixture begins to thicken too much, add the additional ½ c milk.
- Once cheese is incorporated, add the shrimp and the crab meat. Stir to combine and continue to cook over medium heat until seafood is hot.
- Stir the pasta and broccoli mixture in the Dutch oven to loosen from pan, then add the seafood mixture to the pasta. Stir and fold gently to incorporate. Serve immediately. Top with Parmesan cheese and parsley, if desired.
