Oh my GOODNESS! Wait until you taste Creamy Southwestern Corn with Bacon! It is AMAZING! This sweet, yet savory combination of cream cheese, cayenne pepper, bell pepper, onions, corn and BACON is absolutely out of this world!!!
Each bite of this flavorful combination brings a whole new meaning to sweet and savory. And who knew that bringing all of these yummy flavors together could be SO EASY!! Seriously ya’ll! Total time for this delicious side dish is about thirty minutes, give or take. And that’s if you fry the bacon! If you happen to use the prepackaged bacon bits, then it will take even LESS time!!
The best bet is to get that bacon fried up. Then set it aside to cool while you whip together the creamy cayenne sauce….mmmmm hmmm!
First, melt the butter in a large sauce pan. Then add the diced onion and bell pepper. Once they’ve had a chance to soften a bit, add the minced garlic; and then the cream cheese.
While the cream cheese melts, press down on the cream cheese with the back of your spoon. This will help to speed up the process of melting the cream cheese.
When the cream cheese begins to melt well, add the milk and continue to stir or whisk the sauce. Then add the cayenne pepper, black pepper, paprika and sugar. Continue to whisk sauce to combine well.
Make sure to drain the corn before adding it to the spicy sauce, then stir it into sauce and ensure kernels are well coated. Then, cover and continue to heat Creamy Southwestern Corn with Bacon over low to medium heat until mixture begins to bubble. Remove from heat and stir in about 1/2 cup of the bacon bits. Then pour corn mixture into a serving bowl and top with remaining bacon!
So quick, so easy, so delicious!! How can you go wrong with corn and BACON!!!???? The cayenne pepper lends a lovely flavor and kick to Creamy Southwestern Corn with Bacon. However, it is a little on the warm side. So if your family prefers less spicy fare, you can always reduce the amount of cayenne that you use.

- Add onions and bell pepper; sauté briefly until slightly softened.
- Add minced garlic; stir to combine.
- Add cream cheese and whisk until it melted.
- Pour in milk and continue to whisk until all is combined and sauce begins to thicken. Then add the cayenne pepper, black pepper, paprika and sugar; whisk to combine.
- Add corn to sauce pan and stir to coat with sauce.
- Add about ½ cup of the chopped bacon and stir to distribute evening.
- Pour corn into serving dish; top with remaining bacon and parsley flakes. Serve immediately.
