Easy Reubin Casserole

Ingredients
8 slices rye bread
2-14.5 oz. cans Sauerkraut, drained
1 medium onion, diced
1-16 oz. bottle Thousand Island dressing
1 ½ lbs. corned beef, chopped
16 oz. Swiss cheese, shredded
4 Tbsp. butter
Instructions
- Preheat oven to 350’F. Grease a 9 x 13 baking pan and set aside.
- On a griddle, melt the butter and toast the rye bread, making sure both sides are lightly toasted. Once cool enough to handle, cut the bread in small squares. Add half the bread to the greased baking pan.
- In a bowl, combine Sauerkraut and onion, then add this mixture to the pan.
- Pour half the bottle of Thousand Island dressing evenly over Sauerkraut mixture.
- Add half of the Swiss cheese over the top of the dressing layer and top with the chopped corn beef.
- Add the remaining dressing to the corned beef layer, and top with remaining bread.
- Bake casserole for 40 minutes or until heated through.
- Remove from oven and add remaining Swiss cheese and return to oven until cheese is melted and bubbly.
