First of all, this delicious soup starts with fresh Cremini mushrooms and onions happily getting acquainted in the butter at the bottom of your skillet….All the while you could be humming ‘Over the river and through the woods, to Grandmother’s house we go’…. I love this time of year!!! and I love Thanksgiving time…looking forward to spending time with my family, as I hope all of you are, as well!!

Then, when the onion is opaque and the mushrooms are tender, add the minced garlic, stirring to combine well. Can’t you just smell those earthy delicious flavors wafting by your nose….??? Mmmmm!!! And adding this chunky, flavorful soup to your Green Bean Casserole, or any casserole is quick, simple and easy!!
From Scratch Cream of Mushroom Soup is really so easy, it would be a shame not to try it at least just once! And I’m betting that when you make it once, you’ll, no doubt make it again and again. The fresh, chunky mushrooms and delightful flavor make this yummy soup a wonderful and tasty addition to any casserole or soup bowl!!!
Also, when you add the flour to create the paste, stir gently and make sure it’s mixed well. Continue to stir paste over low to medium heat briefly, being careful not to let paste burn. This will help remove the raw flour taste. Once this step is complete, then it’s time to add the beef broth, stirring gently, but constantly. This will help keep the soup from sticking and reduce the chance of the soup becoming lumpy..
Once the paste and broth have been combined and the liquid is beginning to thicken, stir in the milk. Continue to stir until soup reaches the desired thickness, then remove from heat. Add salt and pepper to your taste, then it’s ready to serve!!

- In a large skillet or Dutch oven, melt butter, then add the onion and mushrooms gently stirring to coat with butter.
- Sauté onions and mushrooms, stirring occasionally, until onions are opaque and mushrooms are tender.
- Stir in the minced garlic, and add the flour stirring gently to make a paste. Cook and stir paste briefly, then pour in the beef broth, continuing to stir until liquid begins to thicken.
- Add the milk, combining well, and continue to cook until liquid is bubbly and begins to thicken again.
- Remove from heat and add salt and pepper to taste.
