Greek Inspired Corn Salad

24 oz. fresh or frozen corn
1 large cucumber, seedless, quartered & thickly sliced
1 small red onion, largely diced
8 oz. cherry tomatoes, halved
1 green bell pepper, largely diced
15 oz. can black olives, halved
1 avocado, roughly chopped
1 c. Feta cheese, crumbled
For the dressing:
2 c. plain Greek yogurt
1 c. sour cream
2 t. canola oil
1 small cucumber, seedless, grated
1 T. garlic, minced
1 T. fresh dill, finely chopped
1 T. ranch dressing mix
In a large sauce pan, bring corn to a boil for 2-3 minutes. Remove from heat and plunge corn into ice cold water to stop the cooking process.
Drain and add to a large mixing bowl along with the sliced cucumber, onion, tomatoes, bell pepper, and black olives, then set aside.
In a small mixing bowl, combine the Greek yogurt, sour cream, canola oil, grated cucumber, minced garlic, fresh dill and ranch dressing mix and whisk together to combine.
Pour dressing mixture over vegetable mixture. Add half of the avocado and half of the Feta cheese and fold together. Allow to chill for at least 4 hours or overnight.
When serving, top with additional avocado and Feta cheese.
