As I sit here pondering the post I will write about Hearty Beef Stew, I’m thinking about this busy and joyful time. I love this time of year! Lot’s of wonderful memories that I will forever cherish are from wonderful Christmas’s past. Christmas’s that I spent as a child opening gifts that had been placed lovingly under a real Christmas tree. The special chore of adding water to the stand that it sat in. Remembering my Dad climbing up to the front porch roof to decorate the roof line with giant Christmas lights! I remember standing in the front yard watching as the lights came to life when he flipped the switch. Red, blue, green, yellow, beautiful! In the eyes of a child, beautiful Christmas lights, dancing on the edge of the roof in glorious color!
Hearty Beef Stew fits right in with this time of year! During the busy days of working, shopping for gifts, weekends and evenings busy with Christmas parties and school programs it’s easy to get a delicious and hearty meal on the table for the family! This simple, but filling stew is a snap to put together in the slow cooker in the morning! When you come home from your busy day, simply stir the stew together and you’re ready to serve it up to your hungry family!
Red potatoes work very well in Hearty Beef Stew! Cubing them up, leaving the skin on and adding them to the slow cooker is the first easy step…
Next, simply add the frozen green beans, celery, onions, and carrots….
So quick…so easy…
Almost there…
Add the golden mushroom soup, garlic and tapioca…
Add stew beef to the top of the ingredients…
Finally, pour the beef stock over the stew beef, then cover and cook on low for 8-10 hours! The original recipe came from my Mother-in-law years ago. But after a few tweaks and changing it some to work well in a slow cooker, my version was created. In conclusion, Hearty Beef Stew is a delicious, quick, simple and handy recipe to reach for on those extra busy days during Christmas or any other day you’re looking for a hearty, stick-to-your-ribs meal! Ingredients
Instructions
- In a large slow cooker, layer the potatoes, green beans, carrots, celery, onion, and garlic.
- Cover top of ingredients with mushroom soup, then sprinkle the tapioca evenly over the soup.
- Top ingredients with the stew beef, then pour the beef broth over the beef. Set slow cooker to low and cook for 8-10 hours.
- Just before serving, stir together gently to combine ingredients.
