This week’s featured recipe is one that I continue to have requests for! Lisa’s Sassy Beans is such a versatile dish and works well for those holiday parties as well as summer outings! Throwing this recipe together is a snap too, and I like to use my slow cooker to keep it just the right temperature for serving! Both sweet & spicy, these beans are AMAZING!

¼ c. butter
1 large sweet onion, diced
1 large bell pepper, diced
2 t. garlic, minced
2 lbs. ground beef or pork
1 lb. bacon, cooked and crumbled
2 pkg. taco seasoning
1 t. garlic powder
1 t. cumin
2 ½ t. chipotle seasoning
1 t. pepper
½ t. ground red pepper
2 (15 oz. cans) butter beans, drained & rinsed
2 (15 oz. cans) dark red kidney beans, drained & rinsed
2 (28 oz. cans) baked beans, any flavor
1 (24 oz. jar) medium salsa
2 (10 oz. cans) diced tomatoes with green chilies
¾ t. liquid smoke
¾ c. ketchup
2 T. mustard
½ c. brown sugar
In a large pot or Dutch oven, briefly sauté onion and bell pepper in butter.
Add ground beef or pork and minced garlic to onions and peppers and cook until meat in no longer pink. Drain fat and return meat to pot or Dutch oven.
Add taco seasoning, garlic powder, cumin, chipotle seasoning, red and black pepper to meat mixture and combine well.
Add beans, bacon, salsa, tomatoes with green chilies, liquid smoke, ketchup, mustard, brown sugar and stir gently to combine all ingredients.
