This week’s featured recipe is one that I continue to have requests for! Lisa’s Sassy Beans is such a versatile dish and works well for those holiday parties as well as summer outings! Throwing this recipe together is a snap too, and I like to use my slow cooker to keep it just the right temperature for serving! Ingredients
¼ c. butter
1 large sweet onion, diced
1 large bell pepper, diced
2 t. garlic, minced
2 lbs. ground beef or pork
1 lb. bacon, cooked and crumbled
2 pkg. taco seasoning
1 t. garlic powder
1 t. cumin
2 ½ t. chipotle seasoning
1 t. pepper
½ t. ground red pepper
2 (15 oz. cans) butter beans, drained & rinsed
2 (15 oz. cans) dark red kidney beans, drained & rinsed
2 (28 oz. cans) baked beans, any flavor
1 (24 oz. jar) medium salsa
2 (10 oz. cans) diced tomatoes with green chilies
¾ t. liquid smoke
¾ c. ketchup
2 T. mustard
½ c. brown sugar
Instructions
- In a large pot or Dutch oven, briefly sauté onion and bell pepper in butter.
- Add ground beef or pork and minced garlic to onions and peppers and cook until meat in no longer pink. Drain fat and return meat to pot or Dutch oven.
- Add taco seasoning, garlic powder, cumin, chipotle seasoning, red and black pepper to meat mixture and combine well.
- Add beans, bacon, salsa, tomatoes with green chilies, liquid smoke, ketchup, mustard, brown sugar and stir gently to combine all ingredients.
- Heat through and serve.
