Sausage Stuffed Mushrooms

Hey ya’ll!  I’ve decided that, for the new year, it might be fun to change things up a bit here at Cornfed Creations!  So, during 2017, each month will have it’s own, unique theme!  And each week during that month, I will share fun and easy recipes based on that month’s theme!

With upcoming sports events, I decided that the most appropriate theme for January would be Appetizers!  That being said, this week’s featured recipe is Sausage Stuffed Mushrooms!  These delectable bites of YUM are sure to be a hit at your next party or get-together!

Stuffed mushrooms have been a favorite with some of my family for a long time!  My hubby certainly loves them!  Honestly, when I first discovered how much he loved them, I was a little intimidated to try to make them.  But once I figured out how, and developed my own version, it’s really pretty simple.  Let me show you just how easy Sausage Stuffed Mushrooms really are to put together….

Preheat the oven to 375’F and simply wash and drain the mushrooms.  Then separate the stems from the caps.

Chop the stems into small pieces…

Then melt butter in a skillet and add the chopped mushroom stems, diced onion, and bell pepper, stirring to mix ingredients well.  Saute until veggies begin to get tender, then add the minced garlic…

Now, reduce the heat and add the cream cheese.  To help with the melting process, you can cover the skillet until the cream cheese begins to soften.  Remove the cover and stir the cream cheese into the veggies until well combined.  Then add the panko, sausage and about half of the shredded cheese, making sure to combine well between each addition.

Once the filling for Sausage Stuffed Mushrooms is ready, adding it to the mushroom caps using a spoon is really pretty easy.  The panko and shredded cheese help the filling to stay together!  Once filled, top each cap with more shredded cheese (can you really EVER have enough cheese?).  Then place in the oven until they’re golden brown, hot and delicious!

Ingredients

2 lbs. cremini mushrooms, washed
1 small red bell pepper, diced (about ½ cup)
1 small onion, diced (about ½ cup)
1 t. garlic, minced
2 T. butter
1 lb. sausage, browned, drained & cooled slightly
4 oz. cream cheese
½ c. plain Panko bread crumbs
8 oz. Italian style cheese, finely shredded

Instructions

  1. Preheat oven to 375’F.
  2. Lightly grease two baking pans and cover with parchment paper; set aside. Separate the mushroom caps from stems and chop stems into small pieces; set aside.
  3. In a large skillet, melt the butter until it sizzles, then add the chopped mushroom stems, diced onion and bell pepper. Sauté until vegetables begin to turn tender, then add the minced garlic and continue to sauté for an additional minute.
  4. Reduce heat and add cream cheese to the skillet, stirring to combine with vegetables. When combined, add the Panko, the sausage and about half of the shredded cheese, stirring between each addition.
  5. When thoroughly combined, spoon filling into each mushroom cap and place on baking sheet, leaving space between each mushroom.
  6. Once all mushroom caps are filled, top with remaining shredded cheese and bake for 15-18 minutes or until center of mushrooms reach 165’F and tops are golden brown.
