Another reason I love Fall so much is that its time to start bringing out the comfort food recipes! First of all, one of the biggest reasons that I really love this recipe is that it is SOooooo easy! You throw the yummy goodies together in the morning and let your slow cooker the work! Then, with a little bit of effort once it’s cooked, the delectable finished dish is ready to serve your hungry family!!

While we’re adding the goodies, I’d like to tell you that I love cremini mushrooms! The firm texture of these fresh mini portabellas makes them so easy to slice. As a result, once cooked, they also add to the heartiness of Savory Beef Roast with Mushrooms! Yummmo!!
As you can see, I also dot the surface of the beef roast with butter. Adding butter, in my opinion, just brings a richness to the roast that enhances the flavor. Isn’t everything ‘better with butter’? 🙂

- Place beef roast in the bottom of a slow cooker and cover the top surface with the cola. Sprinkle the top of roast with the onion soup mix. Then top the roast with the onion slices, mushrooms, the minced garlic and steak seasoning. Dot the top with the cubed butter, then place the lid on the slow cooker and cook on low setting for 8-10 hours. Just before serving, separate beef roast from juices. Set roast aside. Skim most of the fat from the top of the juices. Measure 2 cups of the juice and pour into a medium saucepan. Add the brown gravy mix and whisk constantly over medium heat until gravy begins to thicken, then add the cream of mushroom soup and continue to whisk until well blended. Pour half of the gravy into the slow cooker, top with roast then cover roast with remaining gravy. Cover and keep slow cooker on warm setting; serve immediately.

The extra beef broth can be reserved for use in future recipes!
