Southwest Sloppy Joes

Yields 4 servings
A quick and delicious choice for lunch or supper!

Ingredients
1 lb. ground beef
1 medium onion, diced
1 medium bell pepper, diced
1 (14 oz.) can fire roasted tomatoes (salsa style)
1/4 c ketchup
1 T prepared mustard
2 t chili powder
1 t garlic powder
1 T canola or olive oil
Instructions
- Heat oil in a skillet.
- Add onion and bell pepper, then saute briefly and add ground beef. As ground beef cooks, chop into fine pieces with spoon. Cook until no longer pink and drain grease.
- Once drained, add cooked meat mixture back to skillet and add the fire roasted tomatoes, ketchup, mustard, chili powder and garlic powder one at a time, stirring between additions.
- Heat through and serve on buns or rolls.
