Southwest Sloppy Joes

Yields 4 servings

A quick and delicious choice for lunch or supper!

Ingredients

1 lb. ground beef
1 medium onion, diced
1 medium bell pepper, diced
1 (14 oz.) can fire roasted tomatoes (salsa style)
1/4 c ketchup
1 T prepared mustard
2 t chili powder
1 t garlic powder
1 T canola or olive oil

Instructions

  1. Heat oil in a skillet.
  2. Add onion and bell pepper, then saute briefly and add ground beef. As ground beef cooks, chop into fine pieces with spoon. Cook until no longer pink and drain grease.
  3. Once drained, add cooked meat mixture back to skillet and add the fire roasted tomatoes, ketchup, mustard, chili powder and garlic powder one at a time, stirring between additions.
  4. Heat through and serve on buns or rolls.
