Okay, so, I know I’m sharing another zucchini recipe….But really, zucchini are such a versatile veggie, not to mention, low in calories (depending how they are prepared, of course). This week’s recipe is delicious and flavorful, yet simple and fairly quick to prepare!
P.S. a food processor comes in really handy, or if you don’t have one, a hand held shredder will work fine too! We love these little patties of yumminess here at our house! - In a medium mixing bowl, combine the zucchini, onion, bell pepper and garlic; set aside. In a smaller mixing bowl, whisk together the flour, baking powder, crushed crackers, salt, season salt and pepper. To the flour mixture, add the eggs and whisk together to make a batter. Add egg mixture to zucchini mixture and stir to combine. Heat butter or oil to sizzling in a skillet or griddle and add batter by the quarter cup full. Flip fritters when bottom side is golden brown. Brown the opposite side, then remove from heat and serve immediately.
