Zucchini Fritters

Okay, so, I know I’m sharing another zucchini recipe….But really, zucchini are such a versatile veggie, not to mention, low in calories (depending how they are prepared, of course).  This week’s recipe is delicious and flavorful, yet simple and fairly quick to prepare!

 P.S.  a food processor comes in really handy, or if you don’t have one, a hand held shredder will work fine too!  We love these little patties of yumminess here at our house!  This recipe makes approximately 12 of these yummy fritters and they work well when frozen too!  So Give them a try and please drop me a line to share your opinion!  Until next time, have a GREAT week!  Lisa 🙂

Zucchini Fritters

Delightful, versatile, fresh and yummy!! These fritters are a real treat and easy to put together, too!

6 c. zucchini, shredded & drained
½ c. onion, finely diced
½ c. red bell pepper, finely diced
1 T. garlic, minced
2 c. all-purpose flour
1 t. baking powder
1 ½ c buttery crackers, crushed
½ t. salt
¼ t. season salt
1/8 t. pepper
2 eggs
Butter or canola oil


  1. In a medium mixing bowl, combine the zucchini, onion, bell pepper and garlic; set aside. In a smaller mixing bowl, whisk together the flour, baking powder, crushed crackers, salt, season salt and pepper. To the flour mixture, add the eggs and whisk together to make a batter. Add egg mixture to zucchini mixture and stir to combine. Heat butter or oil to sizzling in a skillet or griddle and add batter by the quarter cup full. Flip fritters when bottom side is golden brown. Brown the opposite side, then remove from heat and serve immediately.
